This coffee from the Popayan region benefits from its exceptional geographical setting, characterized by the protective Andes and fertile volcanic soil, ensuring a unique coffee production process. After being meticulously handpicked to ensure only the ripest cherries are used, the coffee is milled in Popayan and then transported to Caldas for decaffeination.
For decaffeination, the coffee undergoes a sustainable process using Ethyl Acetate, a natural by-product of sugar cane refining. This method is not only effective in removing caffeine but also allows for the reuse of the decaffeinating agent, highlighting an efficient and environmentally conscious approach. The result is a specialty decaffeinated coffee that retains its original characteristics.
