This coffee is produced by Jairo Arcila, a third-generation coffee grower from Quindio, Colombia. He has two children, Carlos and Felipe Arcila, who are the co-founders of Cofinet. This coffee was hand-picked with only the ripest cherries harvested. The coffee was sundried on raised beds in temperature-controlled conditions until the ideal moisture content was achieved.
This decaffeination process is unique. The caffeine is extracted from the bean using sugar cane and water, which enhances sweetness while maintaining coffee attributes. The cherries were then hulled and decaffeinated using ethyl acetate process which is naturally derived from sugar cane. This process preserves the integrity and flavor of the coffee bean while stripping away caffeine.
