Five farms make up Café Granja La Esperanza — Cerro Azul, Las Margaritas, La Esperanza, Potosi and Hawaii. Cerro Azul and La Esperanza are located in the municipality of Trujillo, Las Margaritas and Potosi are in Caicedonia and Hawaii is in Sasaima, Cundinamarca.
This Geisha is grown at Cerro Azul farm, and at this lot, cherries are picked at a sugar content of 18 BRIX. Carefully hand-picked cherries are first pre-fermented in Granja’s stainless steel fermentation tanks for 36 hours with the temperature controlled to ensure it never exceeds 30 °C. This allows time for complex flavor characteristics to build within the coffee before it is sent to the mechanical dryer for 48 hours.
The cherries then dried slowly in solar dryers for approximately 2 weeks, until it reached 110/o of moisture content. This is followed by a resting period of (at least) three months in climate- controlled warehouses, allowing the moisture content to stabilize.
This naturally processed Geisha has the elegant acidity of Red Grapes, followed by juicy sweetness of Rock Melon, with the refreshing and aromatic finish of Orange Blossom.
