Felipe and Carlos Arcila are the 4th generations of coffee growers and the co-founders of Cofinet, a coffee producer and exporter located in Colombia. Their father, Jairo Arcila, is a well-known coffee grower from Quindío. This Sidra comes from Jardines del Edén, a coffee farm that focuses on growing exotic coffee varieties.

Originally from Ecuador, the Sidra variety has been used by many coffee professionals on the world stage. Sidra is a rare cross between Typica and Red Bourbon, resulting in a combination of sweet and juicy flavor from Bourbon, with delicate and floral notes from Typica.

The processing starts with picking and sorting crimson red cherries with high brix level, then exposed to a 24 hours dry aerobic fermentation, before being placed inside Grainpro bags for 50 hours, in a stable temperature just below 22°C. During this process, the bacteria feeds on carbohydrates and sugars that are found on the coffee’s mucilage, leading to a higher lactic acid concentration. Then this coffee was placed on raised beds until 11% moisture content was achieved.
