This coffee comes from Panaikang, a village in Gowa Regency, South Sulawesi, at an altitude of 1,300 to 1,500 MASL. It is produced by Yolan Tirta, the founder of Toduri Coffee. They started processing specialty coffee in 2016. Sulawesi experiences high rainfall throughout the year, which means coffee takes longer to dry. To address this, they built greenhouses to speed up the drying process. Yolan Tirta also helped farmers build a mini mill with a drying station and supported them in meeting the standards for specialty coffees. He is an example of how the new generation of coffee farmers is driving the production of exceptionally high-quality specialty coffees in several areas of South Sulawesi.
Ripe coffee cherries are selectively picked from the trees. The outer skin and pulp of the cherries are then removed mechanically using a de-pulping machine. After that, the coffee beans are fermented in water tanks. Following fermentation, the beans are thoroughly washed with clean water to remove any remaining mucilage. The washed beans are then dried under the sun on a patio, the drying process can take several days, depending on the weather.
