Tuang Coffee, founded in 2014 by Andre Tuang in Ruteng, Manggarai, on Flores island of East Nusa Tenggara, aims to support local coffee farmers and improve the region’s coffee industry. Before Tuang's initiative, coffee from Flores was often mixed with other regional coffees and exported as commodi
ty-grade, with farmers underpaid and lacking market access. By 2023, Tuang Coffee had over 2,000 members in 12 farmer groups.
Located in the Mbohang valley at 1,500 MASL, the farm spans 600 hectares, where coffee grows in healthy conditions with organic fertilizers and minimal pruning.
For processing, ripe cherries are handpicked before sorting and undergo anaerobic fermentation in tanks for 240–360 hours with a local fermented palm juice starter. After fermentation, the cherries are dried for 7–8 weeks until the green beans reach desired moisture. Then, the dried pods are sealed and rested for three months before they’re hulled. Finally, the green beans are sorted, packed, and sent for export.
