The Panama Iris Estate Terroir showcases exceptional qualities stemming from its terroir: a unique combination of soil, climate, and cultivation practices. The coffee is produced by Iris Estate, founded by coffee professionals Jamison Savage, Sasa Sestic, and Elvin Siew, who believe specialty coffee should reflect its terroir rather than just processing styles.
Located in Volcán, Chiriquí province, the center of the Panamanian coffee industry, the farm benefits from the fertile, moist highlands of Baru Volcano, ideal for producing a diverse range of high-quality coffee beans with rich flavor.
Cherries are carefully harvested at their perfect ripeness, then depulped and washed before undergoing a meticulous drying process on a three-tier African bed system that controls temperature, humidity, and airflow to enhance flavor and prevent over-fermentation. After drying, the beans rest in their shells for up to 90 days to stabilize, extend shelf life, and enhance flavor—followed by hulling and sorting before export.
