Ijen Lestari founded by Dandy in 2016, located on the slopes of Mount Ijen, East Java. The average farm size is three hectares. Lestari means sustainable, he also hoped to create employment and empower the local people to improve their social welfare, self-subsistent coffee processing, and sustainable local employ-ment.
Dandy took the bold step of establishing a washing station, committed to elevating the quality of coffee in the region. Over more than six years, Dandy diligently cultivated Arabica coffee in the picturesque Ijen region, earning both local and global recognition for his contributions to the Indonesian coffee industry, and also winning the 2023 Indonesia Cup of Excelence, earning the highest cup score of 91.41.
The coffee processing starts after picking the ripest cherries, then they put them inside the fermentation tank and macerate the cherries with carbon dioxide for 3 days. After the fermentation, the cherries are pulped, leaving the sticky mucilage on the beans, and then they are dried until they reach 11-12% moisture content. The name “Pink Honey” comes from the pinkish color of the mucilage that remains after pulping.
Honey Carbonic Maceration process gives this coffee a refresh-ing fruity aroma and flavor of tangerine, followed by a stone fruit flavor of nectarine, and a finish of rosella tea.
